
Zucchini Fettuccine

Ingredients:
4 (1 packet) medium zucchini, peeled
1 tablespoon coconut oil
1 teaspoon dried herbs
Salt and pepper to taste
Directions:
1With a vegetable peeler, cut zucchini into long fettuccini -like strips.
2In a sauté pan, heat coconut oil over a medium-high heat and add zucchini and dried herbs.
3Cook zucchini, stirring occasionally, for about 5 minutes, until tender.
