Vanilla and Chocolate Oatcake

Cook Time: 1 minute 30 seconds

Ingredients:

For the cake:
1/8 cup (50g) mashed banana
1 whole egg
½ tablespoon coconut flour
1 teaspoon baking powder
2 teaspoons sweetener of choice
2 tablespoons milk of choice

For the sauce:
2 tablespoons cottage cheese,
1 tablespoon Greek yogurt
½ teaspoon vanilla extract,
1 teaspoon sweetener
1 tablespoon cocoa
Slivered almonds, to garnish

Directions:

1Mix all cake ingredients with a hand held blender and pour into a lightly greased mug or ramekin; microwave for 1 minute and 30 seconds.

2In a small bowl, whisk all sauce ingredients together until smooth.

3Slice cake into 3 and spread the layers with the chocolate sauce Sprinkle with slivered almonds and serve.
