2 blocks 90% Lindt dark chocolate for dipping
1 tablespoon oat flour (ground oats)
2/3 cup almond flour (ground almonds)
1 tablespoon unsweetened dried coconut
Sweetener to taste or ½ tablespoon agave nectar
1 egg white
1 ½ teaspoons cinnamon
2 teaspoons coconut oil
½ teaspoon vanilla extract
Unsweetened coconut flakes and crushed almonds for decoration
1Preheat oven to 175° C.
2In a bowl, mix all of the ingredients (except the coconut flakes and crushed almonds) until dough is formed. The dough should be moist. If not, add a little extra coconut oil.
3Divide dough into 8 and form into cookies.
4Place cookies on a baking sheet and flatten with a fork that has been dipped in almond flour.
5Bake for 10-15 minutes, until golden brown.
6Transfer on a wire rack and let cool.
7Melt chocolate over a double boiler, dip cookies chocolate and decorate with coconut flakes or crushed almonds.
