½ tablespoon coconut oil
2 small spring onions
½ red pepper, seeded and chopped
¼ cup cherry tomatoes cut in half
1 teaspoon crushed garlic
1 teaspoon fresh chives, chopped
1 teaspoon fresh parsley, chopped
6 slices smoked turkey ham
8 egg whites
¼ cup (a handful) mozzarella cheese, coarsely grated (optional)
1 tablespoon cottage cheese
1 tablespoon coconut milk (or cottage cheese.)
Salt and pepper to taste
1Preheat oven to 180°C.
1Heat coconut oil in a frying pan and add onion, peppers, tomatoes, garlic and herbs. Sauté, stirring occasionally, until tender, about 8-10 minutes.
1In a mixing bowl, beat eggs and egg whites together with a fork; stir in the sautéed vegetables and grated cheese.
1Line 6 silicone muffin cups with the turkey ham slices.
1Pour egg mixture into the ham casings and bake for about 30 minutes or until set.
1Serve right away or let cool down and refrigerate.
