For the pancakes:
1/3 cup (30g) oat flour
1/3 cup almond flour or almond meal
1 medium banana, mashed
½ teaspoon vanilla powder
1/4 cup coconut milk
For the sauce:
1 tablespoon cocoa powder
1 tablespoon whey protein powder
Splash of water
1 serving granulated sweetener
Fresh strawberries, hulled and sliced or other fresh fruit of choice, to garnish
Coconut oil, to grease the pan
1Place all pancake ingredients in a blender and blend until well combined and smooth.
2Grease a non-stick pan with coconut oil and heat over a medium-high heat.
3Spoon 2 tablespoons of batter into the pan and spread with the back of the spoon into a round pancake. Cook, flipping once, for 30-40 seconds per side, until golden brown. Transfer to a plate and tent with aluminum foil to keep warm.
4Repeat until all batter has been used.
5Serve pancakes warm with fresh strawberries on the side.
