
On the go Berry Muffins

Ingredients:
½ cup almond meal
1½ teaspoon coconut flour
1/4 teaspoon baking soda
Pinch of salt
1 egg, lightly beaten
1 ½ teaspoon coconut oil
1½ teaspoon raw honey or agave nectar
1 mashed banana or 1/3 cup unsweetened apple sauce
1-2 handfuls (¼ -½ cup) mixed fresh berries
Directions:
1Preheat oven to 180°C. Lightly spray 6 muffin cups with cooking spray and line with paper liners; set aside.
2In a medium bowl, combine almond meal, coconut flour, baking soda, and salt.
3In a separate bowl, combine egg, coconut oil, honey, and mashed banana and mix well.
4Combine wet and dry ingredients and spoon into the prepared muffin cups.
5Bake for about 20 minutes, or until golden. Cool on a wire rack for 5-10 minutes before removing from the muffin cups.
