Chocolate Waffles

Ingredients:

For the waffles:
½ cup plus 2 tablespoons (50g) organic raw rolled oats, blended to flour
4 tablespoons low fat cottage cheese
Sweetener to taste
1 scoop (20g) chocolate whey isolate (helps the waffles to rise)
½ teaspoon baking powder
4 egg whites, lightly beaten
1-2 tablespoons cocoa powder

For the chocolate cream:
2 tablespoons plain yoghurt
1 tablespoon low fat cottage cheese
1 teaspoon organic vanilla extract
1 tablespoon cocoa
Sweetener to taste
Fresh strawberries, hulled and sliced (or other fresh fruit or nuts of choice), to garnish

Directions:

1Preheat a non-stick waffle maker.

2Blend all waffle ingredients in a blender or with a hand held blender until well combined.

3Lightly coat waffle maker with a cooking spray and cook waffles until crisp.

4For the chocolate cream, in a bowl, whisk together all ingredients until smooth.

5Serve waffles warm, topped with chocolate cream and garnish with fresh strawberries.
