
Berries, Protein Oats and Almond Pudding

Ingredients:
½ cup organic rolled oats
1 cup water
½ teaspoon raw organic cocoa powder
½ teaspoon cinnamon
1 serving natural sweetener of choice
1 egg, lightly beaten
1 tablespoons (10g) flaked almonds
1/3 cup mixed berries
For the Sauce:
1 tablespoon Greek yoghurt
2 tablespoons cottage cheese
1 serving granulated sweetener
½ teaspoon vanilla extract
4 squares (40g) Lindt 90% Cocoa Supreme Dark Chocolate, finely chopped
Directions:
1In a blender or food processor, blend rolled oats into a fine flour; transfer to a a medium saucepan and add water, cinnamon, cocoa and sweetener.
2Bring the oats to a boil over a medium-high heat; , reduce the heat to low and simmer for about 5 minutes, until cooked.
3Take the saucepan off the heat and stir in egg quickly to avoid the egg white turning clumpy. Place the lid and let the mixture steam a bit until the egg is cooked.
4In a small bowl, whisk together yogurt, cottage cheese, sweetener and vanilla until smooth.
5Melt chocolate in a double boiler over simmering water; stir until smooth and take it off the heat.
6Layer the oats with berries, almonds, sauce and melted chocolate and serve.
